NO FLOUR PEANUT BUTTER COOKIES by Janet Lisco
- 2 c. sugar
- 2 c. peanut butter
- 2 eggs, beaten
- 2 tsp. vanilla
Mix all ingredients together. Roll into small balls. Press with fork. Bake at 350 degrees for 8 minutes.
Recipe can be halved! Enjoy!

“French Prisoner” Breakfast
- 1 piece of “brown” toast with olive oil
- 1 pear
- 1 cup of black coffee
- 1 pack of cigarettes for ornamentation
Prepare the coffee in a metal stove-top percolator or french-press. On an old wood table, place the toast on a ceramic plate and drizzle olive oil from a repurposed glass jar. Set the pear down next to a paring or multi-use, folding (pocket) knife. Toss the cigs down so they lay askew, casual, smokeable but unsmoked. Pour the coffee into and drink from either a small, plain ceramic mug or tin cup. Eat the toast by hand, cut bites of pear one by one and suck them from the blade of the knife.
Invite no one. Stare out the window in silence. Think. Voilá.

Hot Italian chicken sausage pasta with spinach, black olives and mozzarella by Njideka Akunyili
This is a TASTY meal that can be ready in 30 mins flat! It might take a while
longer the first time but it gets faster after that.
This is my go to meal for those days when I’m really hungry and have no desire
to spend a lot of time making a meal.
Ingredients for about 5 people
- Penne pasta
- Olive oil
- Hot or mild Italian chicken sausage (about 6 links)
- Garlic - 5 cloves
- Spinach leaves - quantity depends on how much you like spinach. I use about a
whole colander full - Sliced black olives
- Shredded Mozzarella cheese
- Salt and pepper to taste
Heat a pot of water and get the pasta started. While you wait for the water to
boil, start the rest of the recipe.
In a 12" non-stick skillet, heat about 1 tsp of oil over medium-high heat and
brown the sausage on all sides (this can take about 8 - 10 mins). Mince your
garlic and wash the spinach.
Once the sausage is brown on all sides, turn off the heat and transfer the
sausage to a cutting board. Cut the sausage into half inch cylinders and set
aside in a bowl.
Add the pasta to the boiling water.
Turn the heat back on the skillet (wipe it down with some paper towel)
and heat
about 1 tbs of olive oil on medium high heat. Add the garlic and after 30
seconds, add the spinach. Mix gently for about 4 mins. Add the chopped up
sausage and keep gently mixing for about 8 mins. Add the sliced olives
cook for
a minute longer and turn off the heat (cook for a little longer if you
feel the
sausage needs more time).
At this point, your pasta should be ready. Drain the pasta and leave in the
sieve. Transfer the spinach, sausage mix to the now empty pot the pasta was
cooked in. Slowly add and stir the pasta into the pot until the pasta:spinach
mix ratio is to your liking.
Add shredded mozzarella to the pot and Voila!
Add salt and pepper if you desire
Bon Appetit!
The variations you can make to this pasta is endless. Broccoli Rabe can
be used
instead of spinach, the olives can be removed, mushroom and bell
peppers can be
added, parmesan can be used in place of mozzarella, I’ve even made it without
using any cheese.

Francesca’s MEXICAN PIZZA!
- 1 quantity Basic corn meal pizza dough
- 2 tablespoon olive oil
- 1 small white onion, finely chopped
- 3 gloves garlic chopped
- 1 cup or so black bean puree
- ¼ cup tomato sauce
- 1 cup grated cheddar cheese and mozarella
- LIMES!
- 1 large avocado
Method:
Preheat oven to 200 C.
Grease a 30 cm round pizza tray.
sautee onion and garlic 3 to 4 minutes or until soft. Add beans and season and simmer until thickened slightly. Remove from heat.
Roll the cornmeal dough into a 30 cm round. Place the pizza dough on the prepared tray. Spread with tomato sauce. Top with mince mixture and cheese. Bake for 15 to 20 minutes or until the pizza base is crisp and golden.
Combine avocado and a tablespoon lime juice spoon on to the center of pizza and garnish with avocado topped by the tortilla chips.
GARNISH lavishly with chopped CILANTRO!, sour cream, chopped pickled JALAPENOS, chopped red onion!
Dough
- ½ cup yellow cornmeal or polenta
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup water
- 2 tablespoons olive oilt
Place the polenta, flour, baking powder and ½ teaspoon salt onto your work surface. You could also combine the ingredients in a food processor or a bowl. Make a well in the center and add the water and olive oil.Combine and knead for about 8 minutes until the dough is elastic and shiny.

Place 2 sheets of paper towel on a microwave safe plate, lay the bacon out on the paper towel not over lapping the slices. Place 2 more sheets of paper towel on top. Place in the microwave on high for 6 to 13 minutes.Editor details

THE WAY I LIKE MY BOLOGNESE By Michael Mikulec
INGREDIENTS
- 1 cup chopped pancetta
- teaspoon crushed red pepper
- 1 garlic clove
- Half stick Butter
- 1 cup finely diced carrots
- 1 cup finely diced onions
- 1 cup finely diced celery
- 4 sweet italian sausage links (removed from their casings)
- 1 pound hamburger meat
- 1 cup red wine
- I 12 oz can tomato sauce, unsalted
- 1 12 oz whole peeled tomatoes
- tablespoon dried basil
- salt & pepper
- pinch of oregano
PREPARATION
Take a teaspoon of butter and heat on medium high. Add pancetta and cook for about 5-7 minutes, or until clearly cooked. Add crushed red pepper and garlic, mix well until the garlic begins to brown. Add remainder butter with the carrots, onion, and celery. Caramelize for 10 minutes, stirring constantly. Add meat and sausage, stir aggressively and constantly until meat browns. Add wine, raise heat and gently stir for 2 minutes. Add tomato sauce and stewed tomatoes, stir until it boils, lower heat to medium / medium low add basil, and oregano. Season to taste. Let cook for about 3hrs, the longer the better, mix occasionally.

- ½ C water
- food coloring
- 1 t Borax
- ½ C water
In medium bowl combine glue, ½ C water and several drops of food coloring. Stir constantly.
In a large bowl combine ½ C warm water and borax powder. Stir until dissolved.
Pour glue mixture into borax mixture, stirring until a “glob” forms.
Don’t eat this! A tactile sensation! You will play for hours!!

2 Ripe avocados,
1/3 C Newman’s pineapple salsa,
½ Lemon
Scoop out avocado into chunks and stir in salsa and fresh lemon juice. Season with salt and pepper to taste.
